Bloggers sometimes guild the lily just for the sake of posting something different (or not getting caught for copyright theft, grin!). So here’s a sort of ‘back to basics’ recipe dedicated to the forgotten genius of simplicity.
Take 2 pounds of ripe organic or on-the-vine tomatoes and cut them into whatever size you wish. Mix 2 tbsp olive oil with 1 tbsp balsamic vinegar, a pinch of salt, a large pinch of sugar and a lot of freshly ground black pepper. Whisk the dressing and pour over the tomatoes. Cover and leave at room temperature for a few hours then serve with fresh crusty bread to mop up the juices.
